Executive Sous Chef for 5 Star Resort in Antigua
Title: Executive Sous Chef
Salary: 55kUSD plus 18k housing + annual bonus
Location: Antigua
Our client is an award:winning luxury hotel group based in the Caribbean. We are assisting them in their search for an Executive Sous Chef to work at one of their beautiful properties
The ideal candidate will be a graduate of an internationally recognized culinary institution or equivalent, technical training/school and have a min of 3 years experience as Executive Sous Chef in an international first class hotel/resort.
Specific Knowledge and Skills Required:
* A Demonstrated knowledge of sauce preparation, soups, butchering, Garde Manger and all culinary operations, experience in buffet decorating.
* A Basic knowledge of specialties such as pastry work and ice carving is desirable and very essential;
* A Knowledge of volume production and ability to maintain the highest quality standards;
* A Strong hands on knowledge of various international cuisines obtained in first class hotels/resorts;
* A Proven management abilities in and demonstrated knowledge of:
o Budgeting and forecasting;
o Departmental profit / loss analysis;
o Effective verbal and written communication skills.
